Has anyone ever encounted a problem were the low water warning light stays on and the temp rises yet the radiator is full of coolant
Any help would be much apriciated

The low water warning light is for your windscreen washers.. not the radiator. Some water in the washer bottle should fix that up.
The overheating problem would probably be due to a stuck thermostat. Remove the thermostat altogether and see if that fixes your problem. If it does then go out and buy a thermostat for an L300. L300 thermostat opens up sooner than a Starion thermostat.
