Do they have tyres or not. This will make a big difference.
Go there, take one of your front wheels off. Try one of the 18's where you just took the wheel from. If it goes on, good try a back one. If it doesn't go on, they don't fit.

18 inches fit with out a prob, it's the offset that will get you. Bear in mind starions have a 20 mm offset (standard offset for RWD cars pre 85), Now pretty much all RWD cars use the same offset as FWD cars (which is about 35-40mm)
Whats all this mean??? Well a wheel with 35mm offset will end up fouling hard on the front strut, you can get away with it on the rear, but not the front. You'll need at least 15mm of wheel spacers on the front. Believe me i know, I've got 18's on my starion and have had to get custom wheel spacers made up which cost a packet.
Stick with a set of simmons or something, at least they can make your offset.

how did the 18's affect your acceleration? did it make your car slower off the mark?

yeah it would just bog down with anything less than 3500 rpm i put a set of 14s on the rear to see the difference and tried the same only to leave 2 big lines for about 20m but it was fun trying oh and with 18s the speedo is out exactly 10ks with 215/35s on them

All the time? Wouldn't it be a percentage relative to the speed, like if it said 100 you would be doing 90, if it says 50 you would be doing 45, etc?

so what is the ideal size wheel for a starion?
im not too concerned with the 'bling' look, i was thinking either 15 or 16 inch? i dont wanna lose any acceleration due to oversize wheels....

I don't think it's the size that determines the acceleration.
But the weight of the wheels. (rim + tire)
As long as the outer diameter is the same there should also me no effect on acceleration.
Offcourse larger wheels then to have more weight..
But the stock 14" suck when it comes to handling to much tire roll
