I've done a quick search on here, but can't seem to find much. Is there a step-by-step guide somewhere to changing a head gasket on a VR4 head?

Did you check the 4g63 pdf in the technical section of the side.

It also covers the DOHC.

But in short.. it's basically the same as the SOHC, just the torque spec is a bit different if I remember correctly.
